Juicy prawns simmered in the fragrant, sun-kissed flavours of the Malabar coast — made simple with the Masala Makers Malabar Coastal Coconut simmer sauce. Serve with steamed rice and lime wedges.

Ingredients

  • 1 jar Malabar Coastal Coconut Simmer Sauce
  • 600g raw prawns, peeled and deveined (tails on or off)
  • 1 tsp ground turmeric
  • 1 tsp salt
  • 1 tbsp coconut oil (or any neutral oil)
  • 4-5 curry leaves (fried)
  • Fresh coriander and lime wedges to finish

Method

  1. 1Marinate the prawns in turmeric and salt for 10 minutes.
  2. 2Heat oil in a large pan over medium heat and cook the marinated prawns for a minute or two until they start to change colour.
  3. 3Stir in the Malabar Coastal Coconut sauce and bring to a gentle simmer for 4-5 minutes until the prawns are pink and cooked through.
  4. 4Garnish with fried curry leaves and coriander, and serve with rice and lime wedges.
